What is Butternut Squash?
Butternut squash, also known as superfoods, is a peanut shaped fruit that has a beige exterior with an orange flesh. It can last up to three months after harvest.
If you clean and roast the outer skin, it is edible. Not everyone does this, but it’s perfectly fine as are roasting the seeds.
Butternut squash is believed to have originated in Mexico or Argentina, but no one can be sure.
It is also known as Butternut Pumpkin in Australia and New Zealand.
Pumpkins are harvested in October and November, but butternut squash can be purchased all year round in most grocery stores.
Butternut squash can be compared to sweet potatoes, but the squash has less sugar and carbs.
